Sfinge

In honor of Domenica (Tripi) Matteliano of Montemaggiore Belsito

Sfinge (Doughnuts)
INGREDIENTS:
2 cups water
1 Tablespoon sugar
2 tablespoons butter
2 cups flour
4 Teaspoons baking powder
2 Teaspoons vanilla
6 extra large eggs
Frying oil

METHOD:
In a good size saucepan bring the water to a boil add sugar and butter.
Combine the baking powder and flour together,
add mixture to saucepan and stir in quickly.
Cook over medium heat, stirring constantly,
until mixture starts to form a ball. (30-60 seconds)
Remove from range and cool.
Add eggs to mixture one at a time, beating after each egg.
Add vanilla and beat again.
Heat frying oil to 375%.
Drop dough into hot oil with a tablespoon.
Fry a few at one time, pan should not be crowded.
Fry dough until golden brown. (3 minutes)
Remove from oil and place on dish covered with absorbent paper.
(This will remove excess oil)
Sprinkle with powdered sugar.
